I've tried using tree collisions, but apparently they can only be static. How can I create dynamic custom shapes (like the irregular shapes in the demo)?

Maybe you misread the question. I just need to create irregular shapes like in the demo (so I can create meshes). I don't need to modify the collisions later.

the only way you can so irregular shape is by using compound collision of convex pieces.

Yes: NewtonCreateCompoundCollision()
Also, technically, Newton's tree collisions (and other static bodies) can indeed move and push around other objects. It's just that other objects can't push
